Resepi Nasi Arab K/Tun

Ingredients:

1kg Basmati rice *
7 large Bombay onions (cut into rings)
1.5 – 2kg lamb (cut into bite size)
3 large carrots (grated coarsely)
2 Tbsp salt
2 -3 Tbsp sugar
3 Tbsp Jintan Manis powder
½ cup Raisins
Water (Ratio of water 1.5: 1 measurement of rice) **

Method:

  1. Soak the Basmati rice in hot water. Leave aside till ready to be used.
  2. SauteƩ (tumis) until fragrant and crunchy (garing). This should take around 10 -15 minutes.
  3. Add lamb pieces and grated carrots, then stir and put the lid on, lowering the heat and remembering to stir occasionally. This has to be done till the meat is cooked through (daging menjadi empuk).
  4. Add water then stir in the salt and sugar. Cover and let the mixture simmer.
  5. Drain the rice, add to the pot and stir well. Leave the lid on and stir occasionally. (about 5 - 10 minutes)
  6. Stir in the raisins.
  7. Garnish with cumin powder (don’t stir)
  8. Remove the pot away from direct flame and place a baking sheet on the “dapur”. The pot is then placed on the baking sheet. Then, wrap the lid of the pot with a tea towel and use it to cover the pot. To ensure the steam does not escape during the remaining cooking time, place a weighted object (e.g. water filled small basin) on the lid. (35 minutes)
  9. Once the rice is cooked, serve with your choice of curry and vegetable salad.


This recipe serves at least 10 persons




* when the rice is soaked, do not stir it too often.
** e.g. 1 cup of rice, therefore 1 ½ cups of water. 2 cups of rice, then 3 cups of water etc etc
